Lychee and Lime Soda drink


I have almost forgotten to post this refreshing Lychee and Lime soda drink recipe until a reader (Sem) was asking me for the recipe as she would like to prepare this drink for her son's upcoming Birthday party..This drink was served in the recent bloggers CNY gathering at my house..

1 can of Lychee syrup
10 Key Limes (Limau Nipis), grating the zest and squeezed the juices
Lychee and Lime Soda drink Soda water
Syrup water
Ice cubes


Methos
1. Blend Lychee syrup (together with the Lychee flesh) and lime zest till fine.
2. Add in lime juices, soda water and adjust the sweetness to your preference by adding the syrup water.
3. Add in ice cubes and enjoy!

Longan Pudding/Jelly, and the new winner of my 1st giveaway for "other countries"

Longan Pudding/Jelly


I made this Longan Pudding 2 days ago as the weather here was so hot and hazy, about 2 weeks no rain at my place. I need something to cool me down...



















You know what, after i made this jelly, my place started to rain, hahaha....

The original recipe is using soy milk, but soy milk was run out stock and i was lazy to go out to get some, I replaced evaporated milk with soy milk. I like the texture of this pudding, not too soft and not too firm. But my kids and hubby still prefer the soymilk pudding with palm sugar syrup and minced ginger that i prepared earlier.

Longan Pudding/Jelly
(recipe source: adapted from The Kitchen 70's with minor changes)

1 canned Longan fruit in syrup

1tsp agar-agar powder
1tsp gelatin powder
100g sugar
700ml water

200ml evaporated milk or soy milk
100ml Longan syrup (from canned longan)
3tsp lemon juices

Method
1. Mix agar-agar powder, gelatin powder, sugar and water in a saucepan, cook over low medium heat until bubbles form around the edges of the saucepan.
2. Add in milk and Longan syrup, stir and mix well. Add in lemon juices and turn off heat, keep aside to cool for 5mins.
3. Pour the mixture into prepared jelly cups, let it cool for 30mins and firm on top.
4. Spoon canned Longans and 1-2tbsp of Longan syrup on top, refrigerate until set.
5. Serve cool.

Minced meat & baked bean with rice


Yesterday I was run out of idea what to cook for dinner, checked inside kitchen cabinet and saw 1 can of baked bean and 1 can of luncheon meat. "Ting" i recall a recipe in Pig Pig's corner's and this recipe is her all time favourite, minced meat & baked bean with rice, and a sunny side up egg.

Now this rice also become my family's favourite, so simple to prepare and very delicious. Thanks to Pig Pig Corner's for sharing. I use to cook baked beans with minced meat too but her seasonings are difference from mine and resulted a very good baked bean dish.
Beside baked beans and egg, I also topped up with fried lunchen meat and brocolli (at least some green for this canned food meal)

*serves five
(recipe source: adapted from Pig Pig's corner with minor changes)


1 large onion, diced
1 can (450g) baked beans (I use baked beans in tomato paste AYAM brand)
250g minced meat ( I used pork)

Seasonings:
1/2tbsp Worcestershire sauce
2tbsp Thai sweet & sour chili sauce
1tbsp Oyster sauce
3/4tsp salt or to taste
1/2tsp black pepper powder
1tsp dark soy sauce, optional (just to make the sauce look darker)


Method
1. Heat oil in a non-stick pan, sauté onions till soft.
2. Add minced meat, stir fry until cooked and dry.
3. Mix in baked beans and some water.
4. Add seasonings to taste.
5. Cook the sauce till thicken.
6. Serve immediately with rice and a sunny side up egg, vegetables and fried luncheon meat (as per your choice).
