L’Exotique, worth a try !

L’Exotique

My main purpose of purchased one litre of whipping cream actually is to make this L’Exotique. My daughter and I tasted this very delicious dessert cake when SweeSan brought for us in a gathering long time ago. I have bookmarked this recipe for so long but hesitate to make it as this recipe sound so difficult to make. When my daughter requested this cake for her Birthday cake this week, then I have no excuses and have to make for her.

Before i start to make this cake, I printed out the recipe, study and read carefully of every steps required for few times. I also summarize the ingredients in a paper before i start to purchase, especially i have to buy few fruits & veggie like mango, banana, orange, lime, coconut, lemongrass and passionfruit.
This is very similar like a mousse cake, my favourite part of the cake was the flavour of the coconut dacquoise and lemongrass Bavarian cream.

I did not make a good job, see my poor layering..But the taste is super delicious !! A very tropical feel of dessert cake.

I also try to simplify the recipe by combining two Bavarian cream and just prepare at one go..Even with this, there are still a lot of steps to do and I spent almost 5hours to complete this cake! Also need to wash many bowls and tools ! Below is the recipe that i have simplified and follow the sequence..


L’Exotique
(recipe source: adapted from The Sweet Spot with minor changes)
*makes a 6” square

L’ExotiqueMango Compote Gelee
30ml orange juice
10ml lime juice
20g light brown sugar
90g pineapple
90g mango
50g banana
2 tsp powdered gelatin

Method
1. Cover gelatin with 2tsp cold water, let it bloom.
2. Dice fruits with 5mmx5mmx5mm if possible.
3. Add all fruits and brown sugar in a pot and bring to boil and stir till slightly dry and thicken, takes about 5-7mins.
4. Melt gelatin in a microwave for 30sec twice, add into the fruits mixture and stir well.
5. Pour into a lined pan and chill in the fridge for 2-3hours or till set.
6. Remove and cut to desired size.

Coconut Lime Dacquoise

94g egg white
30g caster sugar
16g almond meal
77g icing sugar
60g freshly grated coconut
16g flour
zest of 1 key lime
pinch of salt

Method
1. Combine almond meal, icing sugar, grated coconut, lime zest, flour and salt, set aside.
2. Whisk egg whites till foamy and gradually add in sugar and beat till soft peaks form.
3. Fold in item no1 in few batches. Pour into a pan with lined non-stick baking sheet or Silpat and bake for 20mins at 160c.
4. Remove and set aside to cool.

Passion fruit and Lemongrass Bavarian Cream

4tsp gelatin
180ml milk
100g caster sugar
60g egg yolks

190g dairy whipping cream

110g passion fruit pulp (without seeds)
60g mango puree

3 stalks lemongrass (white part only), pound till fine and add 1tbsp water to extract the juice

Method
1. Soak gelatin with 5tsp cold water and set aside.
2. Whip cream to soft peak form and thick, set aside in the fridge.
3. Whisk egg yolks and sugar lightly in a clean bowl.
4. In another clean pot, combine milk and sugar to a boil.
5. When the mixture comes to a boil. Remove from heat.
6. Pour some mixture into egg yolk mixture and stir well.
7. Return no 6 mixture into the balance milk mixture and return the pot to heat.
8. Stir well till the mixture has thickened.
9. Heat up/ melt gelatin in the microwave for 30sec twice or till dissolved and mix into the mixture and stir well.
10. Take one third of the mixture and mix with lemongrass juices. Fold in one third of the whipped cream into the mixture, stir well.
11. Add passion fruit and mango puree in the balance two third of the mixture and stir well. Fold in the balance whipped cream into the mixture, stir well.


To assemble

1. Get a 6” square cake ring, cut dacquoise to 3 pieces x 6” square.
2. Lay 1st layer of dacquoise, pour passion fruit and mango Bavarian cream on top.
3. Add 2nd layer of dacquoise, pour passion fruit and mango Bavarian cream on top.
4. Then follow by the mango compote gelee.
5. Top with 3rd layer of dacquoise, pour in lemongrass Bavarian cream. Let is set in the fridge for at least 3 hours.
6. Make white chocolate ganache (recipe as per below) and pour over the top. Chill in the fridge for further 3-6 hours or keep it overnight.


White Chocolate Ganache
100ml cream
75g white chocolate, buttons or chopped
Method
1. Bring cream to a light boil.
2. Pour into white chocolate, stir till ganache is completely smooth.


To serve
Use a sharp knife to run around the cake and slowly remove the cake ring. Slice to desired size and serve with small cubes of mango and top with roasted shredded coconut flakes. Poke in 2 small lemongrass stalks to let the flavours infuse more.

This is how SweeSan describe this cake- When you first bite it, the obvious taste would be white chocolate, then goes on to some coconut bits, passionfruit, maybe some pineapple, lastly after you swallow the cake, the lemongrass flavour comes alive, giving it a refreshing after tasted.

I have bookmarked this chocolate cake long time ago, just got a chance to try out since i bought a litre of dairy whipping cream (price is much cheaper if compare to buy just a small packet). Anyway, i need to think few more recipes before the cream get expired(need to consume within 2 weeks after opened), what i can think of is spaghetti carbonara, L’Exotique, Hokkaido milk loaf and etc..

This recipe is from a Chinese blogger, the Chinese name of this cake is 巧克力秒刹蛋糕 , but i have no idea how to translate into English..Since this chocolate cake is very rich in chocolate, so i just call it as Rich chocolate sponge cake..I highly recommend you to try this chocolate cake if you are a chocolate lover, this cake is very rich in chocolate and also moist and soft, simply good!

After i enjoyed a slice of this chocolate cake with a cup of expresso, my throat started to feel itchy, so you can imagine how rich of this chocolate cake it is, hehehe..

I bought this cake stand from Bangkok at chatchuchak market, only cost me RM 25 (USD8).

Rich chocolate sponge cake

Ingredients
Rich chocolate sponge cake 50g corn oil
80g full cream milk
15g cocoa powder
100g semi-sweet chocolate (I use Lindt 70% cocoa)
90g egg yolks (5 medium eggs)

180g egg white (5 medium eggs)
100g caster sugar
75g cake flour

Ganache glaze
150g dairy whipping cream
120g semi-sweet chocolate
12g butter

Method
1. Heat corn oil and milk over a pot of simmering water.
2. Add in chocolate, and stir till melted.
3. Add in cocoa powder, stir well. Add in egg yolks once slightly cooled.
4. In another clean bowl, beat egg whites on high speed until foamy, gradually add in sugar and beat till glossy and soft peaks form.
5. Take one-third of egg whites mixture to mix with the egg yolk chocolate mixture using a hand whisk. Then fold in the remaining egg white using a spatula until well combined.
6. Sift in the flour, slowly fold well.
7. Pour batter into a 7” round cake pan with removable base.
8. Bake at pre-heated oven at 180c for 40mins.
9. Immediately inverted the cake pan and cool on a wire rack.
10. Make ganache by melt chocolate over simmering water, add in cream and butter, stir well till smooth.
11. Pour ganache over the cake and refrigerate in the fridge before serve.

my note: next time i will reduce the ganache amount as the amount in this recipe was quite too much, maybe reduce 20% should be alright.

My son Lucas love this noodles, he always buy this Cantonese style fried noodle from school's canteen. I told my son, if I were to cook for you , the noodles definitey will taste better than the one which is sold in the school , because there will be more ingredients and no MSG added.

This time I cook with rice vermicelli (mee hoon) and flat rice noodles (koey Teow), similar like those we can find in tai chow (hawker stall) or Chinese restaurant, they name as "Yin Yong". You can also replaced the noodles with Yee mee (fried egg noodles).

*serves 5

150g rice vermicelli (mee hoon), soaked in water to soften
500g flat rice noodles (Koey Teow), loosen it
1tbsp dark caramel sauce
1tbsp light soy sauce
1tbsp fish sauce

To prepare noodles
1. Heat some cooking oil in a wok over high heat, add in rice vermicelli, sprinkle little egg on it and lightly fry till light golden brown. Dish out and set aside.
2. In the same wok over high heat, add in flat rice noodles, add dark caramel sauce, light soy sauce and fish sauce, fry till soft and light. Dish out and set aside.

Topping
150g green mustard (sayur sawi), cut into 2” length
100g cabbage, sliced
150g chicken breast, sliced
150g fresh medium prawns
100g squids, sliced
20g carrot, sliced
3 shallots, chopped
3 garlic, chopped

6 cups chicken stock
3 eggs, lightly beaten
Tapioca flour mixture (mix 4tbsp tapioca flour with 6tbsp water)

1 and 1/2tsp salt or taste
1tbsp sugar
1tsp pepper

To prepare topping:-
1. Heat oil in a wok over medium heat, sauté chopped shallots and garlic till aroma.
2. Add in chicken stock, put in cabbage and carrot.
3. Once stock is boiled, add in chicken meat, prawns, squids and mustard green. Cook for few minutes. Seasoning with salt, sugar and pepper.
4. Add in egg mixture and lightly stir, thicken the soup by adding in tapioca flour water.

To serve
1. Place fried rice vermicelli and fried flat Koey Teow on a serving plate.
2. Spoon some hot topping on top, serve immediately. Enjoy!

This month's Aspiring Bakers#10-Easy as Pie just come in the right time, so I can practise the pie, tarts and quiches's recipes that i learnt from Academy of Pastry Arts, Malaysia.

This time, i would like to share with you this special tart recipe, a tart with butter cake filling. I'm not sure whether or you have eaten this kind of tart before. I had this long time ago when i received a box of baby full month package from a friend.

*makes 20 x 2" flower tarts and 4 x 3" round tart
Sweet pastry
Adapted from Academy of Pastry Arts Malaysia’s recipe

Butter cake tarts250g all purpose flour
150g unsalted butter
1/4tsp salt
65g icing sugar ( I replaced with caster sugar)
50g egg (1-2 eggs)

Method
1. Combine flour, salt and sugar in a mixing bowl.
2. Cut butter into small pieces, add into flour mixture, rub the mixture by hand till reaches sandy texture.
3. Add eggs and lightly combine to form dough, do not over work.
4. Cover dough with cling film and keep in the fridge for 1hour.


Butter cake filling

100g butter
60g sugar
2 eggs, medium
200g self raising flour
1/2tsp vanilla extract
2tbsp milk

Method
1. Cream butter and sugar till light and fluffy.
2. Add egg one at a time, add in vanilla extract and combine well.
3. Fold in flour and milk, combine well

To make butter cake tart
1. Take out pastry dough from the fridge, cut into small pieces and mould into tart mould.
2. Fill in the butter cake batter into tart about 90% full.
3. Sprinkle (almond slices, melon seeds or raisin) on top of the tart.
4. Bake at pre-heated oven at 180c for 20-25 mins.

I would like to special dedicate this dish to Love2cook who has been asking me to share this recipe for her. This simple tofu dish is popular at the "tai chow" hawker stalls and Chinese restaurant.. beaten egg and tofu mixture is poured into a hot plate and created a sizzling effect..

The shop owner told me have to special care of this hot plate, have to immediate pat dry after washed, brush and coat entire hot plate with oil before storing it. These steps is to prevent the plate from rusty. I bought this hot plate at RM 20++..

Hot Plate Sizzling Tofu

Hot Plate Sizzling Tofu2 rolls Japanese egg tofu, cut into 1.5cm slices
2tbsp cornstarch

Topping
80g chicken breast, minced
60g prawns, peeled and minced
3 Chinese Shiitake mushroom, soaked till soft, sliced
1/2tsp sugar
1tsp Chinese rice wine, optional
Pinch of salt

2 shallot, chopped
2 garlic, chopped
1cm young ginger, chopped

125ml chicken stock / water
1/4tsp ground pepper
1tbsp oyster sauce
1/4tsp dark caramel soy sauce
1/2tbsp tapioca flour/cornstarch mixed with 1tbsp water

1 egg, lightly beaten
3 spring onion, cut 1” lengthwise
1 fresh red chili, sliced

To deep fry tofu
1. Heat a wok with oil over high heat.
2. Dust the tofu with corn flour, and deep fry till golden brown.
3. Remove and drain on paper towels.

To prepare topping
1. Marinate chicken and prawns with sugar, salt and rice wine for 20mins.
2. Heat a wok over high heat, sauté chopped shallots, garlic and ginger.
3. Add minced meat and prawns, stir-fry until fragrant and browned.
4. Add chicken stock/water, pepper, oyster sauce, dark caramel sauce and salt to taste.
5. Bring to boil and thicken with the tapioca flour mixture.
6. Dish out

To serve
1. Place a hot plate over high heat and add 1tbsp oil.
2. Once it is smoking hot, pour in the beaten egg and top with tofu and mince mixture.
3. Garnish with spring onion and chili.
4. Serve immediately.
