I bought a 12 friand moulds from Melbourne ( there was 30% discount otherwise i will not buy due to high conversion ^_^) and have been searching for a recipe to try out this new mould. I saw this simple carrot cake in Tanja's blog and i immediately tried out using this new mould.
Just few ingredients and don't need a mixer to do the job, the outcome was quite impressed..similar like muffin texture, carrot taste was not strong..but beautiful golden orange colour..
I like this new mould because i can bake mini and cute cake, each of my family just grap one and enjoy!
First I use a food processor to process carrot till coarsely then only transfer to blender to blend it till finely..
I reduced the sugar from 300g to 200g but still taste a bit sweet...that's why i omitted to dust icing sugar on top of the cake..
Carrot Cake Brazilian style
(recipe source: adapted from Tanjas Cooking Corner with minor changes)
*makes 12 friand cakes or 26cm ring baking pan
3 large carrots, peeled and thinly sliced (about 350g)
3 eggs (medium)
240ml corn oil
200g sugar
1/4tsp salt
250g all purpose flour
1tsp baking powder
butter (to grease baking pan)
Method
1. Preheat oven to 175c.
2. Place the sliced carrots, eggs and oil into the bender, then process untill the carrots are finely chopped. Add in sugar and salt, mix till combine.
3. Add flour and baking powder, mix until well blended.
4. Pour batter into greased baking pan, and bake for 35-40mins or until inserted skewer come out clean.
5. Remove cake from pan and let cool and enjoy!
