This is the most easy Japanese noodles can be prepared at home. This soba noodles is my son Lucas's favourite Japanese noodles, he is especially like the cold version of dipping sauce.
Plate, bowl, chopsticks, soba noodles and mentsuyu (dipping sauce) in this pitcure, all were brought back from Japan trip. Later i will share with you where i got these plates and bowls..
You may refer to Nami aka Just One Cookbook for the recipe that she made dipping sauce from scratch, sound easy too...
------------------------------------------------------------------------------------------------------------------Japanese Soba noodles(recipe source: by Sonia aka Nasi Lemak Lover)
1 pack of dried Soba noodles
½ bottle of concentrated tsuyu or mentsuyu (dipping sauce)
Toppings
Chopped spring onion
finely shredded Nori Sheets
Method
1. Bring a large pot of water up to a boil, Once it’s boiling, add in dried noodles and cook according to the package’s directions.
2. Drain the noodles into a colander. Immediately return them to the pot and fill the pot with ice cold water.
3. To serve the noodles-Arrange soba noodles on a plate, sprinkle shredded Nori sheets and spring onion to top. Fill dipping bowl with mentsuyu dipping sauce (you can thin out with water or add ice cubes for cold version). Dip soba noodles in dipping sauce and enjoy!
